Spicing up life with a Rum Nicky Cheesecake

Did you know that cheesecakes were popular dishes in ancient Greece? And that small cheesecakes were served to athletes during the first Olympic Games held in 776 B.C. on the Isle of Delos.

It seems that our Cumberland Rum Nicky Cheesecake is a winner too. I first made it for dinner guests over a year ago and now it’s the most requested dessert when I’m cooking at holiday cottages in the Lake District.

One of my friends absolutely loves cheesecake and makes a very good one. I wanted to surprise her to see what she thought of this melt in the mouth version. It was a hit, the spices nicely cut the creaminess and the ginger comes through the base and the topping too.

A taste of Cumberland now stocked in Kendal

Just before Christmas we were delighted to announce that Low Sizergh Barn near Kendal is now stocking our Nicky range. It’s just 4 miles from junction 36 on the M6 on the A590 towards Kendal. They have a great shop, tea room and farm trail. Worth a visit.
